Coleslaw is a popular Memorial Day treat because it’s so easy to make. But rather than going with a traditional recipe, why not have some tangy apple coleslaw instead? If you’re going to an even that is going to feature ribs or pulled pork, this is going to be the perfect side dish to go with them.
All you need is red and green cabbage, apples, carrots, and scallions (or you can keep it really simple and buy a pre-made bag). That’s the base of the slaw. Chop it all up, ideally into long strips, and then add to a bowl.
Then for the dressing, mix in a few tablespoons of olive oil, honey, and apple cider vinegar. Add in salt, pepper, and lemon or lime juice to taste. Mix it all up and pour into your slaw mix, stir to make sure everything is coated.

Once you have your mixture made, now you can jazz it up a bit to your liking. Common ingredients can include bacon, cheddar cheese, and jalapenos. Or go for corn, scallions, and bacon, or honestly, a mix of any of these. Once your batter is ready, add in your ingredients of choice.
Then pour your batter into a lined muffin pan. You can pre-cook these at home, or toss the tin right onto the grill and cook about 20-25 minutes, then enjoy!
